Try the South Beach Diet cookbook, or the "quick and easy" south beach diet cookbook. For a great discussion of diabetes, I bought the same Doctor's "South beach Heart book". Can you tell me why the low fats, though? I thought good fats like olive and canola oil were actually good for heart health and also diabetes. In any case, I own all of these books and they're GREAT!

I bought a very good recipe book from "Splenda" at the grocery store. Maybe you can check on line and find it , or just watch at the store. (I would see if Splenda has a web site)
