I saw Alton Brown from Food Network make a pretty tasty-looking risotto, the recipe is linked below. If you don't like mushrooms or asparagus, they're optional.

Sweat your chopped sofrito ( onions, celery, garlic ) in a mix of butter and olive oil. Then add the rice ( carnaroli is the best ) and cook for a few mins more. Add a splash of wine or vermouth and let it bubble down. Then add chicken stock ( kept warm in a pan ) ladle by ladle and stir the rice as it absorbs the liquid. This should take about 25 mins. Finish the risotto with a mantecatura ( slice of butter and some grated parmesan ) and serve.
This is a basic white risotto, you can add any other ingredients you like.

First saute any aromatics in oil, (onion, carrot, ginger, garlic, etc.)
Then add arborio rice and saute for a minute or two.
Deglaze the pan with white wine.
Then you start adding hot chicken stock in 1 cup increments, constantly stirring, and adding more stock as the last batch gets absorbed until the rice is the texture that you desire. It will take 25-30 minutes give or take.
Finish with the herbs of your choice.

As you know,risotto is rice in Italian.I do mine in the same way that I cook rice.But I add some onions,fresh garlic,red-green bell peppers,some olive oil.Saute the vegetables first,then add the stuff to the rice.It works for me.

Use home-made chicken stock--NEVER canned--ick! And take a patience pill. It is soooooooooooo worth the wait!

part cook mushrooms,onion & peppers (yellow & green),add mince beef and cook til mince brown.Add rice & mix in stock,add tin of chopped tomatoes and tomato puree,simmer until rice is cooked (add stock as needed),season, add peas/carrot/green beans and simmer for 10 mins,when all liquid has been absorbed serve...
