Yes, "well done" SHOULD be replace by dry, overcooked, and tasteless. Be sure to add "void of nutrition" and "carcinogenic" in there too. Once meat gets cooked that much, you have already burned off much of the beneficial nutritional value. It's not a good route to take at all.

If you have a good cook in the kitchen, well done should not be overcooked. But that is rare to find. Most steaks aren't preped to be cooked well done. And cooks in "chain" restaurants (aka Fridays, Chilis, etc) don't know how to cook steaks anyway.

Theoretically someone who asks for it cooked that way wants it cooked that way. It takes all kinds. as a PS... Unless you know how the meat was handled, anything less than Medium is not safe.
