Actually Roman............ Alfredo is not an Italian food as all claim it to be.
It was created by a ROMAN chef Alfred di Lelio in Rome. He created the dish to help his wife regain an appetite after giving birth to her first child. It has since become very famous.. obviously but certainly not an Italian meal.
The Italians don't have an "Alfredo Sauce"...... instead they simply dress fettucinie with lots of butter and parmigiano cheeses... It is the closest that the Italians came to an alfredo.

I have to tell you that Alfredo is l00% Italian sauce.As a matter of fact,the name is Italian.By the way,the sauce was born in Nor then Italy.Is made from cream,Parmesan cheese,blue cheese,pepper,and some fresh garlic which is saute before you add the rest of the staff.

Alfredo is an italian cheese.
Technically, alfredo is not its own dish, but I guess that some people consider the italian dish with pasta and cheese sauce to be "alfredo", or else they consider the sauce by itself to be "alfredo".

Italian cheese sauce made with Parmesan or Romano and creme
Yumm! wonderful with lobster, crawfish or shrimp with the fettuccine
