You can either encase it in plastic or have a fake display

Is anyone going to eat them?
I used to work in a bakery that had a large display window facing the sun and they used to paint the bread with clear varnish to stop it going off.
You can get it in craft shops; you have to replace the food every couple of months (coz it's not exactly formeldahyde) but it works, and still looks like food.
Obviously though, don't attempt to eat it afterwards.
Most of the chocolate shops near where I live do two things when they're displaying in the windows:
a.) Keep the window cool with an air conditioner
b.) Use a tinted pane to stop the sunlight beating directly on them.
Don't freeze the chocolate because it sweats when it gets warm again and will look gross.

Do I get some free chocolate now?

Don't put any lights above or very near to the display. If no little kids hands or anyones for that matter can get into the display use a spray gloss over the cookies if you want. I think you will be fine......
Melting point..... This should be at or just above 36 °C to ensure that the product melts in the mouth.

Because of humidity, refrigerating is NOT good for chocolate and candy....
but if you're displaying your candies in a well equipped pastry shop or whatever, they should be equipped with a display case made specifically for displaying chocolate. It regulates the humidity and the temperature inside the case, and protects your chocolates or candies.
If you don't have one of these it's pretty hard.
Try to find a way to keep them at a cool and dry room temperature, and obviously out of the sunlight.

Go to the local hardware store, and buy some Marble or Granite tiles. Put the tiles in the fridge or freezer to get them really cold, then display the cookies and chocolate directly on the tile. Have spare cold tiles to swap out if necessary. Also, a small fan - even one of those personal hand held ones in the corner will help.

have you tried taking a cookie sheet, filling it with water and freezing it, cover it with something that wont melt through, maybe another cookie sheet, cover it to look nice and display candy on that? is the display window an enclosed one? you could put in a small room air conditioner. good luck.

Keep them out of direct sunlight and make sure that the temperature is below 80 degrees as most chocolates melt at 80 degrees.

The temperature must be less than 36 degrees kelcium. Either use a fridge or avoid to be near a heat source. (strong lights are heat sources).
