I'd go for two totally separate cages so that if you are having problems, that you at least have the option of totally separating them.
As far as the conure limiting your Grey's ability, I would only say that could be true if you limit the amount of time you spend with your grey. I don't have a whole lot of experience with little birds, so I'm not an expert by any stretch of the imagination on conures, but your grey should do fine if you take several hours a week for one on one constructive training with him, which you I'm assuming plan to do anyway.

It might not take the ability to talk away, but you might get a lot of noise from both of them. Grey's Can pick up alot of different sounds and if it learns the noise from the Sun then you will have the noise that the Grey makes, then from the Sun, and then some extra sounds that the Grey will imitate the Sun, And 2 suns together can be pretty loud so figure this all out and then decide if your ready to handle it. Because birds do make noise.
Allso No one can sell you a bird with a grantee it will talk if it didn't start talk yet. Some birds will just not talk even Grey's.

Two seperate cages. The Grey will mimic your conure and perhaps even choose it as it's mate to the exclusion of you.

a huge cage, one for both of the,. but the grey usually mimicks voices and words it hears alot, so it might just mimick the other bird. but both of them are amazing and fun to have. i especially love sun conures. mine dances!

Your gray will mimick the conure, but it's almost impossible to keep them from using human speech. Since you are getting the gray as a baby, it will form a bond with you, and if you speak to him/her daily with special attention, it will almost definately talk.
