Wish you & your boyfriend have a romantic valentines dinner....

#1...Creamy Oyster Stew

4 large slices (2 ounces) Italian bread, with seeds
2 tsp unsalted butter
3 cups low-fat (1%) milk
1/4 cup flour
3/4 tsp salt
1/4 tsp cayenne pepper
2 dozen oysters, shucked, liquid reserved
1/4 cup chopped parsley

1. Toast the bread and spread with the butter; set aside
2. In a large saucepan, whisk the milk into the flour. Stir over low heat until smooth. Add the salt and cayenne, and cook, stirring frequently, for 3 minutes or until lightly thickened and no floury taste remains.
3. Stir in 1/2 cup of the reserved oyster liquor. Bring the mixture to a simmer, add the oysters, cover, and cook for 3 minutes or just until the edges of the oysters begin to curl. Stir in the parsley.
4. Spoon the stew into individual soup bowls and serve with the buttered toast.

#2...Grilled Tofu with Peanut Sauce

Cut 1lb. firm tofu into eight 1/2-inch-thick triangles. Marinate for 1 hour in 2 tbsp. soy sauce, 2 tbsp. orange juice concentrate, and 1 tbsp. brown sugar. Grill or broil until browned. Puree 1/4 cup chicken broth, 2 tbsp. peanut butter, 1/2 tsp. brown sugar, and 1/4 tsp. ground ginger. Sprinkle tofu with slice scallions; serve with the sauce.

#3... Barbecued Beef Sandwich

Combine 1/2 cup ketchup, 1 tbsp red wine vinegar, 2 tsp. brown sugar, 1/2 tsp. ground ginger, and 1/2 tsp. yellow mustard. Brush half of mixture over one side of two well-trimmed 8-ounce sirloin steaks. Broil 6 inches from heat for 4 minutes. Turn, brush on the remaining mixture, and broil 3 minutes for medium-rare. Thinly slice and place with tomato, onion and lettuce on buns.

#4...Dessert - Coeur a la creme

This French " cream heart " is traditionally made in a special porcelain mold, but a cheesecloth-lined sieve will work as well.
Berry sauce is the ideal accompaniment for this charming dessert.

1 package (8 ounces) reduced-fat cream cheese (Neufchatel)
1 package (8 ounces) non-fat cream cheese
1 cup low-fat (1%) cottage cheese
2/3 cup confectioners sugar
1/2 tsp vanilla extract
2 cups frozen strawberries, thawed
2 tbsp honey
1 tbsp lime juice

1. In a food processor, combine the cream cheese and cottage cheese, and process until smooth. Add the sugar and vanilla, and pulse until combined.
2. Line a heart-shaped ceramic coeur a la creme mold (or a 4- to 6-cup sieve set over a bowl) with a double layer of dampened cheesecloth. Spoon the cream cheese mixture into the mold, wrap the cheesecloth over, and place the mold on a plate to drain. Refrigerate 4 to 6 hours or overnight.
3. Before serving, in the food processor or blender, combine the strawberries, honey, and lime juice. Process until smooth. At serving time, unwrap the cheesecloth mold and invert the mold onto a large plate. Remove the mold and peel off the cheesecloth. Serve with the strawberry sauce.

My favorite is picnic with an assortment of sausages, pates, sliced meats, fruits, cheeses, Dijon mustard and of course a fresh baked baguette of French bread. Depending on where you live you may wish to include appropriate local delicacies.

Baguette of French bread or Italian bread, Cuban bread, Jewish rye, or other favorite.

Dijon mustard; spicy brown mustard; champagne mustard; horseradish sauce; mayonnaise; paté de foie gras; paté de campagne; truffle paté; or other favorite.

Sausages come in a large variety of flavors and nationality brands (make sure they need no cooking); also salamis, either hard or soft. Ready to eat meats include turkey roast, roast beef, corned beef, pastrami or any smoked products.

Cheeses such a Camembert, Brie, Swiss, Canadian strong cheddar, goat cheese, or other ethnic favorites.

hope some of these help :o)

Do you have a fireplace? Lay down a pretty comforter, add pillows, candles, romantic music and of course rose petals and wine if you'd like.

The most romantic picnic is to use finger foods. Avoid cheeses which causes gas. No soda, beer or champagne (burp away). Stay away from garlic and onions. No coffee (coffee breath is gross).

strawberries dipped in chocolate
figs
heart shaped pancakes, sandwiches etc.
chocolate chip cookies
french fries
brownies
chocolate kisses
fortune cookies
heart shaped pizza
donuts
finger foods (chicken wings, egg rolls, shrimp cocktails, oysters, pizza rolls, taquito's, taco's etc)

Coffee with a Kiss
Fix him a cup of coffee, and drop a Hershey's kiss (still in the wrapper) into the cup. When he gets to the bottom of the cup, there's a warm, partially melted, chocolate kiss for him to pop into his mouth.

Comments:
What a "sweet" dessert for an ending to a romantic dinner for two on Valentines Day. Make this decadent chocolate creme brulee for your wife, husband, or for your special lover. They will tell you how lucky they are, that you made this wonderful dessert just for them to celebrate this special lover's day.

2 cups heavy cream
3 oz. good quality bittersweet chocolate, chopped into small pieces
3 large egg yolks
6 tbsp. granulated sugar
1 tsp. vanilla extract

Instructions:
Position a rack in the center of an oven and preheat to 325ºF. Have a pot of boiling water ready.

In a saucepan over medium heat, warm the cream until small bubbles form around the edges of the pan, 2 to 3 minutes. Remove from the heat and stir in the chocolate until melted and blended. Cool slightly.

In a bowl, whisk together the egg yolks and 2 tbsp. of the sugar until the mixture is pale yellow and thick ribbons fall from the whisk, about 5 minutes. Slowly stir in the warm chocolate cream, then stir in the vanilla.

Line a 3-inch-deep baking pan with a kitchen towel and place four 6-oz. ramekins or dessert cups in the pan. Pour the chocolate mixture through a fine-mesh sieve set over a bowl. Divide the chocolate mixture among the ramekins. Add boiling water to fill the pan halfway up the sides of the ramekins and cover the pan loosely with aluminum foil.

Bake until the custards are just set around the edges, 25 to 30 minutes. Transfer the ramekins to a wire rack and cool to room temperature. Cover and refrigerate for at least 4 hours or up to 2 days.

Just before serving, sprinkle 1 tbsp. sugar evenly over the surface of each custard.

Using a kitchen torch, move the flame continuously in small circles over the surface until the sugar bubbles and just begins to turn golden, 20 to 30 seconds per custard. Serve immediately.

Makes 4 servings.

Feed each other finger foods--fruit, cheese/crackers, mini quiche, etc. The intimate contact of feeding each other is very romantic!

Serve with wine or juices--no soda or beer (will be too gaseous).

Also, pick foods without garlic, onion or other pungent spices--who likes to kiss a garlic mouth?

Hope this helps. Good Luck!

Why go for a heavy meal? Why not an assortment of cheeses and fruit with some nice french bread? Champagne, wine, and chocolate dipped strawberries?
