Simple Strawberry Jam

Ingredients

6 cups cored berries, crush them a bit to measure

3 cups of sugar

3 tablespoons of lemon juice

Directions

Cook all ingredients at a very mild boil (less than medium heat) for 40 minutes. Skim the foam from the top of the fruit while cooking.

Preparing and Filing Jars

Inspect the rims of the jars to make sure there are no small chips or cracks. Wash in hot soapy water, rinse well.
Place in pot and cover with boiling water, boil gently for 15 minutes.
Turn off heat and let stand in hot water until about 5 minutes before you are ready to fill the jars.
Place the jars upside down on a clean towel to drain dry. They should still be warm when you are filling them.
Place the lids in a small pot and cover with water. Heat for a few minutes until warm but do not boil the lids. Lids should be warm when they are placed on the jars.
Fill the jars to within 1/4" of the top, or there will be too much air and lessen the chances of a good seal.
After filling the jars, wipe the rims carefully with a damp cloth to remove any food and then top with the warm lid and attach the ring. Try to work fairly quickly so the jars and lids are warm and the food is very hot during this process. This is the reason small batches work well.
After filling jars, return to a boiling water bath for 5 minutes.
Take out and allow to cool. Jars should seal within the hour.

Here is the easiest way of all! Clean the strawberries *take the green stuff off*. Slice if you would like. Simmer with sugar. Real easy. Two parts strawberries with one part sugar. Cook until thick and glossy, about a half hour. Put in a clean container and keep in the refrigerator.
Another old recipe was to chop clean strawberries, add a box of strawberry jello and just cook for about ten minutes. This makes a sweet jelly-like jam. Also refrigerate after making. Yum-Yum!

Servings: makes about 1kg
Level of difficulty: Easy
Preparation Time: 15 minutes, plus sterilizing jars
Cooking Time: 15 minutes
Ingredients
600g preserving sugar
zest and juice of 1 lemon
1kg Strawberries, hulled and sliced in half if large

Method
1. To sterilize jam jars, place them in a large saucepan and cover with cold water. Bring to the boil and simmer briskly for 10-15 minutes. Remove from the water with tongs and place upside down on a clean surface to dry.

2. Put the sugar, lemon zest and juice in a preserving pan or large heavy-based saucepan. Heat slowly until the sugar has melted.

3. Add the strawberries and stir gently. Bring to the boil and cook for 3-4 minutes, or 10 minutes if you prefer a thicker jam.

4. Skim off any froth. Leave to cool slightly.

5. Spoon into sterile jars, seal and label.
