One of my favorite chicken recipes is chicken cooked in a brown paper bag from the grocery. I use one without printing on one side (put that down in the pan).

Preheat oven to 400 degrees

Remove the sack in the chicken and put the liver and kidney's in cavity. Season chicken (I use; salt, pepper, granulated garlic and paprika, but you can use the spices you like). I always say to put too much spice on and in the chicken. Place in the bag. Roll the open end and place on a sheet pan (with edges).

NOTE! Do not let the bag hang over the pan. Fire may result!

Bake at 400 degrees for approx. 1 1/2 hours (1/2 hour per pound).

This is a great, crusty chicken that has been a favorite in my family for 40 years. Be sure to scrape the drippings from the bag and pan into a small bowl and refrigerate. Remove the grease and use as stock for a later meal.

The web site Saving Dinner is an awesome sight if you can afford to spend a little extra money. For a small fee this gal will email you menus each week complete with shopping lists and recipes. She has menus for all different types of diets as well. I used her for a while myself but because of my husbands food allergies, they did not work really well for me.

If you have a smaller budget, check out the Hillbilly Housewife! She has some amazing ideas and recipes as well. Great for eating on a shoe string!

Dinner tonight? Try my favorite quick meal: Mac and Cheese casserole!
Make your mac and cheese like usual and add your favorite meat and/or veggies like: 1 can tuna, drained and peas (frozen peas can be put in with noodles when they are cooking.)
1/2 lb hamburger, browned and drained with mushrooms or italian tomatoes
1/4 to 1/2 lb cooked ham, chopped and broccoli (put broccoli in with the noodles to cook too)

it's called Fabulous Fast Shrimp
the recipe is:

Ingredients:
1 tbsp. butter OR margarine
2 stalks celery, chopped
1/4 cup chopped green pepper
1/4 cup sliced green onions
1 lb. fresh large shrimp, shelled and deveined
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Chicken Soup OR 98% Fat Free Cream of Chicken Soup
1/2 cup water
Dash of cayenne pepper
Hot cooked rice
Paprika


Directions:
HEAT butter in skillet. Add celery, green pepper and green onions and cook until tender. Add shrimp and cook 3 to 5 min. or until done.
ADD soup, water and cayenne pepper and heat through. Serve over rice. Sprinkle with paprika. Serves 4.

How about putting uncooked, boneless chicken breasts in a casserole dish and pour spaghetti sauce over the chicken. Sprinkle fresh grated mozzerella cheese over the top and bake on 350 degrees until cheese is melted and lightly browned on top. Takes about 35 to 40 minutes;Yummy!

I make what we call Shepard's Pie. It is a very simple dish to make.

2 lbs ground beef ( can sub/ most ground meats)
just about any vegetable mixture ( I use green beans and corn) from the can.
Prepared Instant Mashed Potatoes

Brown the meat, drain. Spread on the bottom of casserole dish. Layer vegetables on top. They
will heat up in oven. Then, you put the mashed potatoes on top of the vegetables. Put in oven around 400 degrees. Heat for 15 minutes or so. And boom a meal that most kids will love and parents to. It's a very hearty meal. I put cheese in with mine, I put it on top of the meat and we eat it with Texas Pete hot sauce. But that is just our taste. Try it I am sure you will like it.

The easiest meals that I cook are with my crock pot (also called a slow cooker). There are tons of recipes on the internet if you do a search on "crock pot recipes," "crockpot recipes," or "slow cooker recipes."

It is so easy to just put the ingredients in the night before and set it on low. You can even do desserts in the crock pot! All you have to do is some quick veggies and you have a meal.

One REALLY easy, tasty crock pot recipe is:

Put 4-6 BONELESS CHICKEN BREASTS in the crock pot.
Sprinkle 1 package of a powdered SOUP MIX over the chicken (like Knorr's or Campbell's: onion soup mix, hot and sour soup mix, vegetable soup mix, or mushroom soup mix, golden onion soup mix, onion soup mix, there are endless possibilities!)
Pour over 1 cup of LIQUID (chicken broth, water, even tomato soup for something different)
Cook this on low for 5-6 hours or longer if you don't think it's done.
This makes TENDER chicken.
