A good start is to first find out if you are high in sugar etc, because fruits are good sources of natural sugars, sweeteners and if you over do, can really stack on the weight.

Just like everything, fruit should be eaten daily but the ideal amount is 3-4 pieces of fruit a day.
Vegetables are a little better and in most cases you can eat up to 5 serves a day, as long as they are not too high in carbs, like carrots, orange foods, and of course potatoes.
Other sources are vitamising , like slurpies, and can use most vegies and fruits and can combine and experiment too.
Making own fruit salad let stand covered for a while and add mineral water or diluted fruit juice ( unsweeened), its lovely with most fruits.
Vegetable pie, lasagne soups, stews.
I really think you need to identify why you need to boost your intake and just take care and remember the ideal is 3 serves of fruit and 5 serves of vegetables.
Shakes are good, stuffed capsicums, Cabbage leaves and zuccinis are great too, and instead of using rice and meat in the stuffing, use the pulp of the fruit or veg to be filled, and lots of diced or shredded fruits and veg, can make them sweet or savoury.
Same as pies,
Fill a pita bread , with fruit or veg, and remember instead of spreading with margarine or butter, spread with avacado, , or a favourite mayo, mustard etc, fill and roll.
Can do same with fruit, use squashed banana , and or yoghurt as the spread then fill and roll, if wieght and cholesterol not a worry whipped cream or thick custard is just yum too.
Vegie pasties, triangles made with fio pastry is great, filling vol u vents with minced veg or fruit too, lots of ways to have variety.
Fritatas, banana, pineapple, mando, pancakes are great, crepes with berries, oh dear the list goes on.
If lazy, a big pot of vegie soup or stew lasts for days in the fridge too. Bon apetit

Smoothies are a great way. Have a large side salad with your main evening meal. Have a piece of fruit with lunch.

The best way is to do it in little bits, add an extra piece of fruit or veg to every meal and you will have added 3 pieces a day.

i'm no expert but eating MORE fruit and veg would be an easy way for me to boost my fruit and veg intake.

For this I started drinking smoothies but I buy mine because I can't be bothered to make my own which is half the problem but my brother broke the blender anyway. Also have nice veg like sweet corn.

Add dried fruit, eg apricots/sultanas to curries
slice fruit on top of cereal at breakfast
add grated carrot to home made burgers
add chopped fruit to youghurts
add tinned sweetcorn to soups

Next time you're in a bar eat the lemon out of your drink!

I needed to boost my greens (I was always partial to fruits so that part was OK)
This is how I did it:
I discovered that I was thinking: I have this meat or this kind fish, what can I serve to go with this?
I then reversed my thinking to: what meat would go along with this or that vegetable? I've now lost 4 stone (!), and tried a huge amount of veggies I never tried out before.....

I'm a very picky eater, so this is a tough one for me - I have to hide them from myself. I add chopped frozen spinach to all sorts of things - pasta mixes, Hamburger Helper, spaghetti sauce, you name it. It's practically tasteless and you get an extra vegetable. I even got the kids eating it in mac and cheese once we got past "It's got green stuff in it!"

I also eat spinach and carrots on my sub at Subway, and always look for salads with any kind of lettuce other than iceberg (which has 0 nutritional value and therefore doesn't really count as a vegetable in my opinion).

My favorite snacks are a banana or an apple with a tablespoon of peanut butter or dried apricots and a handful of almonds.

I bought a juice extractor, you can put your 5 portions of fruit and veg in one go, and drink the juice throughout the day. theres no added sugar, all healthy, doesnt bloat you with food and tastes great! you can juice nearly every fruit and veg(not potatoes or high starch - it would taste foul)
you can experiment, carrots,cucumber,tomatoes,apples, pineapple, etc get recipes on the net.
