Nectarine Pie

INGREDIENTS
2/3 cup white sugar
4 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1 cup heavy whipping cream
1/4 teaspoon almond extract
5 nectarines
1 (9 inch) unbaked pie shell

DIRECTIONS
Preheat oven to 400 degrees F (205 degrees C). Place a large pot of water over high heat, and bring to a boil.
Combine sugar, flour, cinnamon, heavy cream and almond extract. Set aside.
Place the nectarines in boiling water for 30 to 45 seconds. Immediately place nectarines under cold running water and remove skins. Cut nectarines in half and remove pits. Place halves in the pie shell with the cut side down. Pour the cream mixture around the nectarines.
Bake at 400 degrees F (205 degrees C) for 35 to 40 minutes. Good served warm or cold.

This classic recipe calls for a crisp topping made with rolled oats and brown sugar. Together with the tender, juicy fruit and berries, it makes a homey, farmhouse dessert that reminds us of peaceful orchards bathed in the golden light of harvest time.
INGREDIENTS

1/3 cup firmly packed brown sugar
1/3 cup sifted all-purpose flour
1/3 cup rolled oats
1 teaspoon ground cinnamon
1/3 cup butter (5 1/3 tablespoons), sliced and chilled
1/3 cup chopped pecans
2 pounds (5-6) nectarines, pitted, sliced, and cut into chunks
2 cups blueberries
1/2 cup granulated sugar

1. Preheat oven to 375F.

2. Mix brown sugar, flour, oats, and cinnamon in a large bowl. Cut the butter in with a pastry cutter or knife until the mixture forms large crumbs. Stir In the pecans.

3. Combine the nectarines, blueberries, and granulated sugar in a 2-quart baking dish and spoon the flour mixture evenly over the top.

4. Bake in the middle of the oven for 40 minutes, or until golden.

Serves 6 to 8.

Swordfish with Fresh Nectarine Relish
Prep: 20 min / Cook:10 min / Cal: 285 per serving

2 tbsp honey
2 tbsp chili sauce
2 tbsp red wine vinegar
1/4 tsp salt
1 pound nectarines or peaches, cut into 1/2-inch cubes
1 red bell pepper, cut into 1/2-inch squares
2 scallions, thinly sliced
1/4 cup chopped fresh mint
4 swordfish steaks (6 ounces each)
1/2 tsp each ground coriander and cumin

1. In a medium bowl, whisk together the honey, chili sauce, vinegar, and salt. Add the nectarines, bell pepper, scallions, and mint, tossing to mix. Refrigerate until serving time.

2. Preheat the broiler. Rub the swordfish with the coriander and cumin. Broil 6 inches from the heat for 3 minutes per side or until lightly browned and just cooked through. Serve topped with the relish. Serves 4.

Nectarine Brulee

Preheat oven to 350 degF. Cut 4 nectarines or peaches into thin wedges. Toss with 1 tbsp. lemon juice and 1 tbsp. sugar. Spoon into an 8-inch gratin dish (or other broiler-proof pan) and bake 10 minutes. Preheat broiler. Top fruit with 1/2 cup reduced-fat sour cream. Sprinkle with 1/3 cup brown sugar. Broil 5 minutes or until sugar is melted and bubbly. Serves 4.

Nectarine Arugula Salad
4 cups fresh arugula or baby spinach
4 cups torn Bibb or Boston lettuce
3 medium nectarines, sliced
2 tablespoons pine nuts, toasted
2 tablespoons crumbled blue cheese
2 tablespoons raspberry vinegar
2 teaspoons sugar
1 teaspoon Dijon mustard
1/8 teaspoon salt
Dash pepper
3 tablespoons olive oil
In a large salad bowl, combine the first five ingredients. In a small bowl, whisk the vinegar, sugar, mustard, salt and pepper until blended. Gradually whisk in oil until dressing thickens. Drizzle over salad; toss to coat. Yield: 8 servings.

FRESH NECTARINE PIE

-1/3 c. all-purpose flour
-1/3 c. sugar
-1/3 c. packed brown sugar
-1/2 tsp. ground nutmeg
-2 tsp. lemon juice
-Few drops almond extract
-7 c. sliced fresh nectarines (about 9 fruits)
-1/3 c. sliced almonds, toasted (optional)
-Pastry for 9" double crust pie
-1 slightly beaten egg white
-1 tbsp. sugar

Method:-

1) In a large bowl combine the 1/3 cup of sugar, brown sugar, nutmeg, flour, lemon juice and almond extract.
2) The almonds also if desired. Mix well then toss with the sliced nectarines.
3) Mound fruit into pastry lined 9 inch pie plate.
4) Adjust top crust. Seal and flute edges.
5) Brush pastry with the beaten egg white; sprinkle with 1 tablespoon sugar. Cut slits in top. Cover edge with foil strips.
7) Bake in 375 degree oven for 30 minutes.
8) Remove the pie and bake 20-25 minutes more or until the crust is golden.

1 quart of freshly sliced nectarines
1/2 cup to 1 cup of sugar, depending on how sweet the fruit is
1 Tablespoon of Fruit-Fresh Produce Protector or a tablespoon of ground up vitamin C (ascorbic acid), or 1 or 2 Tbsp of fresh squeezed lemon juice

Toss sugar and Fruit-Fresh (or Vit C or lemon juice) together in with the fruit. Let sit for 15 minutes to allow juice to form. Pack into containers. Refrigerate for immediate use, or freeze.
