This has never failed me... it's absolutely delicious and easy. I substitute the pecans with chocolate chips. Enjoy!

2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
4 overripe bananas
1 cup sugar
3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup pecans, finely chopped
Confectioners' sugar, for dusting


Preheat oven to 350 degrees F and lightly grease a 9 by 5-inch loaf pan. (***What I do here, is I spray the pan with PAM, then cut some parchment paper to fit the bottom, then spray THAT layer with PAM before puring in the batter.)
In a large bowl, combine the flour, baking soda, and salt; set aside.

Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture.

With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together for a good 3 minutes; you want a light and fluffy banana cream.

Add the melted butter, eggs, and vanilla; beat well and scrape down the sides of the bowl. Mix in the dry ingredients just until incorporated; no need to overly blend.

Fold in the nuts and the mashed bananas with a rubber spatula. Pour the batter into the prepared loaf pan. Give the pan a good rap on the counter to get any air bubbles out.

Bake for about 1 hour and 15 minutes, until golden brown and a toothpick inserted into the center of the loaf comes out clean. Don't get nervous if the banana bread develops a crack down the center of the loaf; that's no mistake, it's typical. Rotate the pan periodically to ensure even browning.

One-Pan Banana Nut Bread

1/3 c vegetable oil
1 ½ c mashed bananas
½ tsp vanilla
2 1/3 c Bisquick
1 c sugar
½ c chopped nuts

Preheat oven to 350 degrees. Beat all ingredients together vigorously. Pour into well greased loaf pan. Bake 55 to 60 minutes. Turn out on rack to cool.
[If you don’t have ripe bananas, place 2 or 3 bananas in the freezer. They will turn black after a day or so. This means the sugars have developed. Remove and defrost- they will probably be a bit mushy. Use them in this recipe.]

I use this recipe: BANANA BREAD: 1 cup sugar 1/3 cup margarine or butter, softened 2 eggs 1 1/2 cups mashed ripe bananas (3 to 4 medium) 1/3 cup water 1 2/3 cup all-purpose flour* 1 teaspoon baking soda 1/2 teaspoon salt 1/4 teaspoon baking powder 1/2 cup chopped nuts Heat oven to 350 degrees. Grease bottom only of loaf pan. 8 1/2 x 4 1/2 x 2 1/2 or 9x5x3 inches. Mix sugar and margarine in 2 1/2-quart bowl. Stir in eggs until blended. Add bananas and water; beat 30 seconds. Stir in remaining ingredients except nuts just until moistened; stir in nuts. Pour into pan. Bake until wooden pick inserted in center comes out clean, 8-inch loaf 1 1/4 hours, 9-inch loaf 55 to 60 minutes; cool 5 minutes. Loosen sides of loaf from pan; remove from pan. Cool completely before slicing. *Do not use self-rising flour in this recipe

Banana Bread

INGREDIENTS
2 cups all-purpose flour

1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
