wheat pancakes are heavy!
a good way to make wheat pancakes fluffy is to separate the eggs and make the normal batter with only the egg-yokes(yellow). the egg-whites then need to be beaten until they are stiff. at the very end you just need to carefully stir the stiff egg white into the finished batter.
they turn out 10 x as fluffy and light!!!

I find that yeast pancakes are always lighter than other pancakes. Try the recipes below. Also, any recipe that includes buttermilk or sour cream will give you a pancake with a lighter texture.

Lastly, try using Whole wheat pastry flour. It's much lighter in texture.

Yeah, they're pretty heavy.

If you add a little lemon juice to regular pancakes and let the batter sit for a while before you cook them, they turn out lighter. Maybe it will work with wheat pancakes as well.
