There is not necessary for the officer to sign on a speeding ticket. He just need the evidence of you speeding, such as speed camera, speed tracking meter instore in their vehicle. Infact, for traffic offences, the officer can even just issue a ticket based on the vehicle reg. number without stopping the vehicle.
You don't have to pay anything to fight for the ticket, but if you don't compound for the offence, normally the fine will be higher by the Judge.

To the first question, that's the type of thing you're going to have to research by getting a big book of your state's laws, if you actually want to fight it on that basis.
To the second, they're not going to charge you for actually showing up at your court date, but it's entirely possible that you'll lose and have to pay the ticket anyway, meaning you've just lost your time as well as your money.

Yes the ticket is valid it does not require your signature but you would be wise to do so as they do have the option of impounding your vehicle if they wish to do so... and yes court coast are assessed upon conviction in Court in some cases if not all...

The only ticket needed on the citation is yours. Your signiture is not an admittance to guilt or innocence. It only implies that you understand what you are being charged with. If you do not do to court, you will be charged with failure to appear and your license will be suspended for failure to pay a fine. (severity of the charge and amount will vary from state to state)
