It was suppose to soften the skin, protect skin from freckles and dark spots. ( I read it in a history book years ago)

Well, who knows about a long time ago, but in modern times, people add milk to their bath for its exfoliating and softening properties.
Milk contains lactic acid, which gently exfoliates dead skin and softens the layer underneath.

Long ago, they used lye as soap. Milk neutralizes lye just enough so it still cleans your skin, but it's not so harsh. Therefore, their skin would come out softer and more supple.
