It depends on how long and on conditions

The carbonation does lessen and escape.

The wine itself may oxidize or the alcohol can evaporate some.

Other things can affect the taste.

I suppose its like most things in life, it will never be as good as when it was perfect.

However, a good Champagne is made from good Chardonnay or good Pinot Noir for example. Remove the carbonation and you still have good wine. Maybe you want to drink it maybe you don't but it won't "spoil" like a glass of milk or juice left on the counter all day. If it isn't perfect maybe use it for Mimosas or Belinis.

If you "must" keep it ... then keep it cold and sealed if possible. It will still be passable the next day or maybe two, but not as much as a week.

Bars keep open bottles of low quality "Method Champagnoise*" beverages for Mimosas and the like and they top them with a gadget that keeps the gas in, and they don't use it always right away.

Worst case: Save it and make a yummy sauce for some veal or chicken from it. Use butter, shallots, garlic, herbs (fresh would be better), capers, lemon juice, cream, etc... Sweat the vegetation, simmer with the wine, add cream and reduce or butter to finish. Just cork the half used bottle and keep it at room temperature. It will be good for cooking for a long long time.




*only sparkiling wine from the Champagne region of France can legally be called Champagne. Everything else is Method Champagnoise meaning that it was made in the Champagne style somewhere other than there.

I've heard some people use a silver spoon to prevent sparkling wine from going flat: you put the spoon in the neck of the bottle, so that the round end of the spoon stays outside - and this end has to be wider than the neck of the bottle, so the spoon doesn't fall into the wine. they swear the wine is still good even if the bottle stays open for 12 hrs. I've never tried it myself though

Not at all. You can leave it open as long as the dinner is going, but after that the "bubbles" are gone and you are left with a foul tasting sort of wine. Throw out what is left over.

No, with Champagne, once you open it, you must drink it right away!

Wine tends to hold longer, not champagne!

definately try a teaspoon in the neck of the bottle.i've tried it and it works.it's still as bubbly the next day.

no, like soda, it will go flat. if you close it after opening, it will only stay good for so long though.

nope goes flat. good to use for ooking though. actually great for cooking at that point.
