Three.
Re. "drizzle with maple syrup" -- bleah! I mean, I'm Canadian, but I'm not THAT Canadian. Maple syrup goes in coffee and on pancakes, not omelettes.
Re. the other answers -- I had no idea there was so much variation. Do most people have bigger pans than I do?
With a normal-size pan and nearly half a carton or more, I think you're veering out of omelette territory and into fritatta. Yeah, those are baked, but if you have that many eggs, you're probably one of those filthy cheats who slides the pan under the broiler to finish cooking the top.
All that said, I know somebody who uses about half an egg per; my father makes them literally crepe-thin. They stay intact, they're not fried to a dry crisp or anything; I've never been able to duplicate it, but he can't, I think, be the only one.
So: 0.5-4 = normal
5-6 = normal pig
6+ = fritatta eaters

I'm shocked at how many eggs people use! Two or three .. it takes a little practice to get a layer of egg around everything. Man! Six to twelve eggs some here use ... wonder what thier colesterol levels look like. You eat a 12 egg omlet just make sure you have the cardiac paddles handy.

2 to 3 per person, same as a plate order . . . any more than that and the arteries seize up. (remember to add a bit of milk to the mix for fluffyness !)
