i have a ton on nectarines that just dropped off our tree. i want to stew and freeze them (preferably without sugar).

Stewed Nectarines with Meringue Topping


Serving size: Serves 6
Cooking time: More than 1 hour



INGREDIENTS


1kg ripe nectarines or peaches, halved with stones removed
1 cup sugar
4 cups water
1 vanilla bean, split, seeds scraped out or ½ teaspoon rosewater

For the topping:
3 egg whites
½ cup caster sugar
pinch of cream of tartar
¼ cup flaked almonds
Preheat oven to 180°C (or 160°C for fan forced).

Place fruit in a large saucepan. Add sugar and cover with water. Add the vanilla bean or rosewater. Stir to dissolve the sugar. Cover with baking paper and slowly bring to a simmer. Remove from heat and allow to cool.

Remove the fruit from the poaching liquid. Cut each half into thirds. Simmer the poaching liquid until reduced by 2/3.

Beat egg whites and the cream of tartar in a large clean bowl until soft peaks appear. Gradually add sugar, beating well between each addition, until mixture is glossy.

Spoon fruit into an oven proof dish and pour over the poaching syrup. Cover with the meringue mixture and scatter with almonds. Bake for 10 minutes or until meringue is golden.

Serve immediately.

peel the skin off the nectarines...slice and then put in saucepan and cover with water...about same as fruit....then you can add honey instead of sugar and put on med heat....stir until fruit is broken and stewed

Honestly, I would just add them to a smoothie. Easy to drink.
