I have made tabouli many times.

All the above is correct, however there are a couple of quick pieces of advice i will give you

1) Chop everything as fine as you can, the finer the chop the better the taste
2) Do not soak the burgul for too long, i would not soak it for more that 5 minutes, You get better flavor having it soak the lemmon and oil, instead of water

I love tabouli salad! Easy to prepare as well. You are not looking in the right place if you cannot find it, as most markets (Wal-Mart included I believe), all sell a mix these days. Try looking for the brand "Near East", which also makes couscous blends (Roasted Garlic & Olive Oil is wonderful). Best luck will be in the Asian/Middle Eastern/Mexican sections of the market. You can also find bulgur wheat in stores that carry "bulk" products, but our Wal-Mart does not. To your salad, you will also want to purchase a cucumber and tomato. If you find a box, you will most likely see a recipe on the back with addition recommendations for a salad. If you buy in the bulk section, and therefore have no seasoning packet, post here and I can send you a few recipes, as herbs, etc., do need to be added. Not trying to push a boxed product, as that was my only go-to for a long time where I live (I'm a 100% scratch cook myself), and am not sure excactly what you are looking for. Oh, and yes, it is Greek, as well as all citites surrounding the Mediterrian, including Morroco and Northern Africa (toss-up whose is best!). I love Northern-Africa, and my parents prefer Greece. Anyway, if you need further help with recipes, post and I would be happy to share.

Tabouli or tabbouleh is a Middle Eastern vegetarian salad. Its primary ingredients are typically bulgur, lemon juice, tomato, mint, parsley and other herbs. It is served cold.

* 1 cup Bulgar wheat
* 2 cups Boiling water
* 2 Tomatoes -- finely diced
* 1 bunch Green onions -- sliced
* 1/2 cup Fresh lemon juice
* 3 tablespoons Fresh mint -- chopped
* 2 cups Fresh parsley -- chopped
* Black pepper to taste
* 1/4 cup Olive oil


Place uncooked bulgar in a bowl; pour in water over it and let it soak one hour (stir occasionally) .Drain well in a fine strainer. Return bulgar to the bowl and add all other ingredients; mix well. Chill for 2 hours.

Tabouli is a Middle East/Lebanese salad.

Ingredients:
Note: For a salad that is not too wet, do not chop parsley in a food processor as it crushes the parsley.

1/3 c Crushed wheat (bulgur)
2 c Water
1/4 c Fresh mint (chopped) or 2 tbs dry
4 Green onions, with ends
2 lg Tomatoes (diced small)
1 1/2 ts Salt
1/4 ts Pepper
1/3 c Lemon juice (or to taste)
1/4 c Olive oil or vegetable oil


Directions:
Instructions:

1. Wash parsley well, drain and shake out excess moisture.

2. Soak crushed wheat in water in a large mixing bowl for 2 minutes. Drain well. Set aside while preparing other ingredients.

3. Remove stems from parsley and discard. Chop parsley very fine (3 bunches should equal about 5 cups). Add to wheat.

4. Chop onions fine and add to mixture along with remaining ingredients.

5. If not served immediately, do not add tomatoes and onions until just before serving. Toss well.

6. Serve with Romaine lettuce leaves. Tear leaves into bite sized pieces and use to scoop up salad for eating.

1/4 cup olive oil
salt and pepper

If you like heat, add Cayenne powder to taste.
I also add more lemon; it's up to your taste.
Chill for 2 hours or until the bulgur is soft and not crunchy.
tabouli is made from wheat germ...it is kinda like a cold salad..it is very good though

It's a parsley and bulgur wheat salad

SAADA'S TABBOULEH

This salad of bulgur and fresh mint is a specialty of Rachel's sister-in-law.

1/2 cup bulgur (cracked wheat)

1 large bunch parsley or 2 small (2 cups finely chopped)
1/2 cup packed fresh mint leaves
4 green onions
3/4 pound tomatoes, seeded, chopped
6 tablespoons fresh lemon juice
2 tablespoons olive oil
3/4 teaspoon ground cumin

Place bulgur in large bowl. Pour enough hot water over to cover generously. Let stand until bulgur softens, about 15 minutes. Drain well, pressing out excess water. Return bulgur to same large bowl.

Meanwhile, finely chop parsley, mint and green onions in processor or by hand. Add bulgur. Mix in tomatoes, then lemon juice, oil and cumin. Season generously with salt and pepper. (Can be made 3 hours ahead. Let stand at room temperature.)

Serves 6.

Tabbouleh Cracked Wheat Salad

Ingredients

(2 servings)

1 c Bulghur (cracked wheat)
1/2 c Boiling water
2 Scallions, finely chopped
1/2 Sweet green pepper, cored, seeded, and diced
1/2 Stalk celery, diced
1/4 c Finely chopped Italian parsley
1/4 c Chopped fresh mint
1 Plum tomato, skinned, seeded, and chopped
1 tb Lemon juice
1 tb Olive oil
1/4 ts Salt
1/4 ts Pepper


Instructions

1. Place bulghur in a small bowl; pour over the boiling water and let soak 10 to 15 minutes. Drain and squeeze dry.
2. Place bulgur in a serving bowl and add scallions, green pepper, celery, parsley, mint, and tomato. Toss to mix.
3. In a screw-top jar combine lemon juice, oil, salt, and pepper. Shake to mix. Pour over bulghur mixture. Toss to mix. Chill overnight.
