place eggs in a pot of cold water over high heat
just before they come to a boil stir for a couple of seconds. Slowly and gently moving the eggs around the pot. Just after they come to a full boil stir again. This action will set the yokes in the center. Perfect for deviled eggs.
Boil on medium high heat for apx 9 minutes depending on your altitude ( over 5000 feet above sea level add apx 2 minutes and a minute for every 1000 feet above that ). Immediately drain and cover with ice. This creates a thin layer of steam between the egg and the shell for easier pealing. Quick cooling can also prevent the yolk from turning green or grey.
If your egg is properly cooked the color of the yolk will be uniform throughout and crumble into a silky damp powder. If the egg is under cooked it will be darker in the center of the yolk than at the edges and be sticky and pliable.

Orange in the middle is undercooked. Put eggs into the pan and completely cover with cold water. Bring to a full rolling boil. Turn off heat and cover pan. Let stand for twenty minutes. Eggs will be perfectly done and will never get that ugly dark color on the outside of the yolk; this happens when they are over cooked by boiling for the entire time of cooking. Now for the fool proof way to peel them. Drain off the hot water and let cold water run over them for three or four minutes. Drain off all water. Put the cover back on the pan. Now grab hold of the handle with one hand and the cover with the other and shake it back and forth until you no longer hear the eggs clattering around inside. The shells will slide right off in your fingers.

when they are overcooked they get a green ring around the yolk. if it's orange, the egg is probably richer in nutrients, the paler the yolk, the fewer nutrients the chicken has had. Free-range chickens lay darker yolked eggs, because they are free to eat bugs & grass & seeds, their natural diet.
To make perfect hardboiled eggs, put eggs into cold water to cover, bring to a boil, let boil 5 mins only, turn off heat, and when the water's cooled enough to stick your hand in without burning, then run cold water over them for a few minutes, then peel them underwater, this way you will not have shells that stick to the egg, and you won;t have overciiked them to where the yolks have the green ring and taste rubbery.

10 mins is correct, if you put the eggs in at the beginning. Put the eggs in a pan, cover them with cold water. (You may need to have 2-3 pans going for 47 eggs!).. Cover the pan and bring it to a boil, As soon as it starts boiling, remove the lid, turn the heat down slightly, then start your timer. Let the eggs boil gentlly for 10 mins. At the end of 10 mins, take the eggs out of the boiling water and put them in ice water. This helps prevent the shells from sticking when you try to peel them. I make hard boiled eggs all the time. This method works. The yolks are cooked through completely. Cooking them longer makes them tougher and a little rubbery.

How To Cook Eggs
Boiled - Put your eggs in a pot (avoid aluminum as it will darken) and cover with cold water. Add a pinch of salt. Bring the pot to a boil over high or medium high heat, then lower the heat and simmer. Depending on the size of your egg, they will need to simmer for 2-3 minutes for soft boiled, about 4-5 minutes for medium and 15-20 minutes for hard boiled. Drain the eggs and immerse them immediately in cold water to stop the cooking process. Refrigerated boiled eggs will keep for about a week.
Fried - Add a small amount of butter or oil to your skillet (non-stick pans will need very little to none of this) and heat. When you can drop a drop of water into the pan and hear it sizzle, it's time to cook the eggs. Carefully crack the eggs into the pan. For sunny side up eggs, allow them to cook for about 3-4 minutes without turning (or until they're done to a consistency you like), before removing them from the pan. If you prefer your eggs turned over, first cook the eggs for about 2 minutes before using your spatula to flip the eggs over. The amount of time the turned eggs are cooked will depend on how you like to eat your eggs.
Scrambled - The cooking procedure for scrambled eggs is the same as for fried. First beat your eggs in a bowl (you can add a tablespoon or so of milk per egg as well as salt, pepper, seasonings etc.). Pour into the skillet and cook while gently stirring until the eggs reach the desired consistency.
Poached - Cover the bottom of a small pot or skillet with about two inches of water and bring to a simmer. Break an egg into a small bowl. Stir the water to create a small whirlpool effect and drop the egg into the center. Cook for 3-5 minutes before removing the egg with a slotted spoon.

Your question is not clear . But if you want to know (1) why the egg york is more orange colour than yellow; it may be normal sometimes. Egg laid by a healthy well grown hen .(2) If you want to know why the middle is Orange while the outer is yellowish..it is also normal as far as I know. But i am not a Exper Egg Eater.

The best way to boil an egg and know for sure it is done .Is to boil it till it crackes. and then you know it's done. It still tastes like a boiled egg.
