The healthiest way would be to bake them. You could do a little spin and bread them. Dip in an eggwash. Then in breadcrumbs and parmesean cheese mixture. Squeeze a little lemon or sprinkle zest of a lemon on top. That way you are getting two fused flavors of the lemon pepper chicken and the lemon breading. Bake in the over for about 20 minutes at 375. Yum

The lemon pepper will go great with this, stuffed and baked:
Chicken Kiev
3 tablespoons reduced-fat margarine, softened
1 tablespoon snipped fresh parsley
1/8 teaspoon garlic powder
6 small boneless, skinless chicken breasts
2 cups Cornflakes
2 tablespoons chopped fresh parsley
1/2 teaspoon paprika
1/2 cup skim milk
Mix margarine, parsley and garlic powder and shape into a rectangle (3 x 2 inches). Cover and freeze until firm, about 30 minutes. Remove excess fat from chicken and flatten each to 1/4-inch thickness between waxed paper. Heat oven to 425 degrees. Cut margarine into 6 pieces and place 1 piece on each chicken breast. Fold sides of chicken breasts over margarine and secure with wooden toothpicks.
Mix Cornflakes, parsley and paprika. Dip chicken into milk and then evenly coat with Cornflake mixture. Place chicken breasts seam side down on a baking dish that has been sprayed with nonstick cooking spray. Bake uncovered about 35 minutes or until chicken is done.

That would be the worst way to ever cook chicken, you are overcooking them. After preparing the chicken brush with a little vegetable oil and lightly salt and massage them. Adjust your oven racks that a baking sheet is 6"-8" from the grilling element and pre heat to 180C. Place chicken in the oven and leave alone for 10 minutes and turn and allow another 10 minutes. Check to see how well done it is and allow a further 5 minutes. Allow to rest for about 5 minutes in a warm place covered. Tip To make them cook more evenly pound the thick ends down to get a more even thickness. For more tasty chicken use thighs or drums, and if you do use breast get them on the bone with the skins. (the skins can be easily peeled off)

I grill these, along with some skewered squash and mushrooms.
I marinate the chicken in a mixture of EVOO, 2 lemon rinds and the juice of 2 lemons. I mix that and let it merry on the chicken for about 15 minutes, and then grill.

An easy meal is chop the chicken into chunks and sautee with some olive oil and onions...and once things are looking done soak it in Frank's Red Hot. You can also use mushrooms, but I'm not a shroom fan.
It's a simple recipe and takes like 15 minutes from grabbing the knife to plating your food.
Have it with a can of corn...it's good.

Skinless itself is a little dry... so I would suggest boil in oven... with a teaspoon of olive oil... since is already seasoned, you shouldn't add more or it might be too much lemon or salty...
I am assuming you want to eat healthy that's why you got the boneless skinless breast.... so used olive oil is healthy for you...

I cook them like grandpa did.
Make up a bowl of flour and any seasonings you want, stir.
Wash breasts off, while wet flip thru the flour/spice mix.
Fill a skillet with about 1/4 or so of oil, normally peanut works well. Fry in skillet few minutes each side.
To me this makes the chicken juicy but also its fried so you get the cholesterol.
