Thanks for all the help. Going to be difficult to pick a best.

P.S. As for being from Texas and finding meat too rare, I've lived here most of my life and cooked medium is just fine for me and strange as it seems, it was my husband, who was born here, who thought it was too rare!

Oh yes. Buy a good meat thermometer though so you never have this glitch again! I finally wised up and I've had perfect roasts since!! Just make sure it's covered so it doesn't dry out!

Yes, or you can also put it in the microwave for 15-20 minutes to finish its cooking.......If still too rare, then do 10 minutes at a time
Don't ever let meat sit out too long.... It's recommended less than two (2)hours to still be safe to eat........I say no more than 1 hour 1/2...........

yes but lower the temp since the meat is exposed. Make sure to lay it out evenly so that it cooks even. May want to bast it so it does not dry out either.

You sure can, but if you don't want to dry it out put it in the microwave to sort of flash cook. If you don't want to do it this way, still stick it in the oven, but if it dries out too much put some beef broth on it to moisten it up a bit.

WAIT.

wrap it in foil or it will be dry as all hell when you get it up to the proper temp.
