How has the market for the product (or products rather ) turned out...is it a success, I was tempted to try it here in Ireland but thought it would turn out to be a passing fad

There is always a market for it, you just have find it. My suggestion is to do some research in your area.

Ostrich eggs are great for cooking and you can even sell the shells themselves (whole).
With the entire ratite family, there isn't anything you can't make as a by-product. Skin lotion, soaps, oils, leather, feather products, and of course, meat.

Lucrative? Depends on your products and your marketing. Ostrich, Emu and Rhea products can generate enough cash flow to maintain, but until the sales pick up, you may want to consider adding a more mainstream product (cows, sheep, chickens) to your portfolio.

i had an ostrich burger and it was the tastiest burger ive ever had. very healthy as far as red meat goes hardly any fat.

as for the market, its still very specialised. you would need to secure a deal with a local supermarket to ensure sales. or start a small organic farm with lots of organically reared animals including ostriches
