Hollandaise Sauce
"This creamy, slightly tart sauce is made from an emulsion of egg yolks, butter, and lemon juice cooked over gentle heat. The secret is to keep the heat LOW so that the egg yolks don't curdle, and to whisk constantly."

INGREDIENTS
4 egg yolks
3 1/2 tablespoons lemon juice
1 pinch ground white pepper
1/8 teaspoon Worcestershire sauce
1 tablespoon water
1 cup butter, melted
1/4 teaspoon salt
DIRECTIONS
Fill the bottom of a double boiler part-way with water. Make sure that water does not touch the top pan. Bring water to a gentle simmer. In the top of the double boiler, whisk together egg yolks, lemon juice, white pepper, Worcestershire sauce, and 1 tablespoon water.
Add the melted butter to egg yolk mixture 1 or 2 tablespoons at a time while whisking yolks constantly. If hollandaise begins to get too thick, add a teaspoon or two of hot water. Continue whisking until all butter is incorporated. Whisk in salt, then remove from heat. Place a lid on pan to keep sauce warm until ready to serve.

I like a mix of 1/2 sechzuen sauce and 1/2 Paul Newman's Balsamic Vinigrette. Yum!! You can also take 2 tblsp butter, melt it over med heat, throw in 2 tblsp flour. Mix. Add 1 cup milk, salt and pepper to taste, 2 tsp fresh dill and 1/2 clove garlic. Not the healthiest but good!!

Try 3/4 cup sour cream, 1 cup of milk, 1 tsp. tarragon, salt and pepper to taste. Combine all of these ingredients in a small bowl. Drizzle over hot veggies. You can heat this sauce up on low if you like. Make sure you are careful not to overdo it as the sour cream can "curdle." If you wnat something with a bit more kick...try using a store bought Greek or Italian dressing.

GINGER GREEN SAUCE
A delicious green sauce that gives vegetables a pleasant kick, and great presentation
2 cups tightly packed, fresh spinach leaves
1/2 cup low-sodium vegetable broth
1/4 teaspoon low-sodium soy sauce
1/2 teaspoon sesame oil
2 teaspoons rice wine vinegar or white vinegar
1/2 teaspoon grated fresh ginger (optional)
Puree green sauce ingredients in the blender until the sauce is bright and very smooth.
Romalade Sauce
2 cups mayonnaise
4 tablespoons lemon juice
2 teaspoons peppercorns or soft green peppercorns
1 1/2 teaspoons honey mustard
1 teaspoon salt
1/4 teaspoon Tabasco sauce
1/4 cup chopped dill pickles
1/3 cup dried cilantro or fresh cilantro
Put everything in the blender except the dill pickles and cilantro.
Pulse until well blended. Add pickles and cilantro, pulse and few times.
Chill until serving.
Warm in serving dish and pass with the cooked vegetables.
White Sauce
1/2 teaspoon salt
1-1 1/2 cup milk
2 tablespoons margarine
2 tablespoons flour
Melt margerine.
Add flour, salt and blend until smooth. Stir in cold milk, gradually until thick, stirring constantly.
If thicker sauce is desired, use 3-4 tbsp margerine and 3-4 tablespoons flour.
For cheese sauce, add cheese whiz or cheddar to taste, and stir in until melted. Serve hot over vegetables, fish or eggs.
Rosemary Sauce
3 cloves garlic, minced
3 teaspoons fresh rosemary, leaves only
1/2 teaspoon lemons, zest of
1 tablespoon white wine or lemon juice
1/4-1/2 teaspoon crushed dried red chili peppers
1/4 lb unsalted butter, softened
salt and pepper
Mix all the ingredients together well.
Melt to serve.

Honey Garlic Sauce
1/4 cup butter or margarine
1/2 cup fresh lemon juice
1 cup honey
2 teaspoons garlic powder
1 teaspoon soy sauce
Melt butter over medium heat. Stir in lemon juice, honey, garlic powder and soy sauce until hot and bubbly. Pour desired amount over veggies and toss to coat.

Depending on what kind of mix...try that Ragu Cheddar or Alfredo sauce. It low in carbs and tastes very good over broccoli and cauliflower.

Sautee some garlic in olive oil, addsome finely diced onions to this, a little soy and you cannot beat this. Sorry you just have to eyeball this as I do not cook with recipes.
