use brown sugar and underbake. besides, they are better when they first come out of the oven. YUM warm cookies and cold milk!
If you are using raisins, soak them in hot water first.

Most of the Cookes I know are just hard people. It is best to boil them if you want to get them tender enough to cut with a fork!
You are baking the cookies too long. Reduce the cooking time by a minute or so. Remove the cookies form the cooking sheet with a spatula and place them on a rack to cool. Leaving them on the sheet continues cooking them until the sheet cools. Please use spell check to avoid silly answers like the one above.

Put them in a sealed plastic container while they are still a bit warm, they will hhold their steam this way. Or add about 1/4 cup applesauce to the batter. It's weird, some people can't make soft cookies and some people can't make hard ones (my mom has given up on ginger snaps). Cooking them at a bit higher temperature for less time might make them brown without dying out.

Take them out of the oven before they are fully baked. (Brown edges, golden insides) By leaving them on the hot cookie sheet they will continue to cook. Remove them from cookie sheet as soon as they are firm enough to move without breaking. Continue to let them cool on a cooling rack.

Use brown sugar instead of white or at least more brown than white. Also underbake them slightly for that perfect, soft cookie.
Oh and RayRay21, if you're going to critique other's spelling, make sure you can spell and use proper grammar (capitals and punctuation)!! Arrogance from the ignorant is so done with!!

first learn how to spell. cooke's are people on a cattle drive that take caer of the food needs to the cowboy's. cookies are sweet in your case fluffy and soft baked goods. to make them soft you want to make them rise more. to do that you can use bakeing soda and bakeing powder. also you want to use a soft fat (melted or partly melted butter).
