first of all, there are no eggs in potato bread for the person that answered below me. second of all, they add coloring to the dough so you can tell the difference between the breads or else it would look like regular white bread. you use a baking potato, not sweet potatoes. the bread tastes sweet because you add sugar. hope this helps!

There are many yellow potatos(yukon golds, for one). Also, as someone else mentioned, there are egg yolks in potato bread.

I think it's originally because of the eggs or egg yolks used to make potato bread. These days, its probably dye or coloring.

It's probably food colouring. The purple skinned potatoes have a more yellowish appearance.
