He could be very interested in not only what you are thinking, but also how you think! Also, if he is not a great conversationalist, it's his way of getting a conversation with you started. But turn the tables on him next time he asks and don't answer that question and give him one back. Do this quite often and you will see if he thinks for himself or if he is relying on you for talk.

Maybe its 'cos they don't know what to say, so what better then to ask some one what they are thinking ,or could be that you don't say much and hence if you are not talking ,then you must be thinking so,"what are you thinking"

he might get tired of dating a "manequin". so speak up.
an honest respond is better than just a smile, believe me its cute for you to be like that...but it get teddious...
