I know this sounds stupid but I was reading an article that stated that Noah "knew" to gather only the animals which were considered "clean" (kosher) onto the Ark.

The Bible teaches that Noah took both clean and unclean animals. 7 pair of clean, 1 pair of unclean.

The story of Noah, and all the stories in Genesis 1-11, are Near Eastern myths picked up by Jewish writers after the exile. They are parables. Look for the theological message when you read them. The Bible should be read in the same level it was written - spiritual.
There are many stories in the Bible which are not meant as teaching. They are there for geographical, cultural, literary and other reasons. The important thing is the revelation.
