Rind usually refers to 'skin', which in the case of bacon would refer to the skin of the pig. Rindless bacon does not have the skin and generally just the layer of fat and then the flesh of the meat.

have you ever eaten bacon with a thin long Grissel bit outside the thin fatty part if so then that's it that is the rind . It is in fact the outside skin or epidermis of the pig (when you see a pig running around this is what you see).most bacon today has that removed hence "rind-less"

The rind is the skin of the pig. You have heard of pork rinds haven't you. Well that is the rind and in some place when the meat is smoked it is smoked with the rind still on the meat. In the U.S. bacon is rarely sold with the rind on it anymore. O hope that I have been some help to you on this matter.

most packaged bacon does not have a rind. When you buy a side of bacon it has the outside skin on it.
