INGREDIENTS
2 eggs
1 (8 ounce) can tomato sauce
1 medium onion, finely chopped
1 cup dry bread crumbs
1 1/2 teaspoons salt
1/8 teaspoon pepper
1 1/2 pounds ground venison
2 tablespoons brown sugar
2 tablespoons spicy brown mustard
2 tablespoons vinegar
DIRECTIONS
In a large bowl, lightly beat eggs; add tomato sauce, onion, crumbs, salt and pepper. Add venison and mix well. Press into an ungreased 9-in. x 5-in. x 3-in. loaf pan. Combine brown sugar, mustard and vinegar; pour over meat loaf. Bake, uncovered, at 350 degrees F for 70 minutes.

INGREDIENTS
4 tablespoons unsalted butter
1 red onion, chopped
4 cloves garlic, minced
4 tablespoons dark brown sugar
3 cups red wine
4 tablespoons red wine vinegar
4 tablespoons tomato paste
4 cups low-sodium chicken broth
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon chili powder
2 tablespoons chopped fresh cilantro
salt to taste
4 tablespoons canola oil
10 slices cooked bacon, diced
2 pounds venison stew meat, trimmed and finely diced
2 cups black beans, cooked and drained
DIRECTIONS
Melt the butter in a large pot over medium heat. Stir in the onion and garlic, and saute for 3 to 4 minutes. Stir in the brown sugar and saute for 2 to 3 more minutes. Then stir in the red wine, vinegar, tomato paste, chicken stock, cumin, cayenne pepper, chili powder, cilantro and salt. Simmer for 30 to 35 minutes, or until the mixture is reduced by about half.
Meanwhile, heat the oil in a large skillet over medium-high heat. Stir in the bacon and fry for 3 to 4 minutes, or until the bacon is browned. Move the bacon to one side of the skillet and add the venison to the empty side of the skillet. Season the meat with salt to taste and saute the meat for 15 minutes, or until well browned. Stir in the beans and toss all together. Transfer this mixture to the simmering pot.
Mix everything together thoroughly and let simmer for about 20 more minutes.

VENISON CHILI

3 T vegetable oil
1 large onion, finely chopped
2 large cloves garlic, minced
1 small hot green chilie pepper, minced (optional)
1 1/4 lb venison, cut into 1/2" cubes
3/4 lb ground venison (or ground pork)
28 oz can of crushed tomatoes
3 T red wine vinegar
3 T ground chili powder
2 T ground cumin
2 T Worchestershire sauce
1/2 tsp cayenne pepper, plus a pinch
1 large green bell pepper, seeded and chopped
2 tsp salt or to taste
freshly ground black pepper to taste
10 oz can of red kidney beans, drained
3 T Masa Harina (or fine cornmeal) mixed with a little water
into a smooth paste for thickening chili

Heat the oil in a very large skillet. Stir in the onion, garlic, and
chile pepper. Saute over med-hi heat until the onion is just tender, about 5 minutes.

Add the cubed and the ground venison and continue cooking for about four to five minutes, stirring with a wooden spoon, until the ground meat is no longer red. Add all the remaining ingredients except the beans and the masa harina (or cornmeal). Bring the mixture to a boil then reduce heat to medium and cook uncovered for 30 minutes, stirring occasionally. The stew should be fairly thick.

Stir in the kidney beans and the masa harina and heat through. Taste and adjust the seasonings.

Let's see you could make:

-Meatloaf

-Meatballs (w/ ground sage,caraway seeds, sea salt, fresh cracked pepper, 1 beaten egg & seasoned breadcrumbs to create an Italian sausage flavor)for a good marinara sauce...serve over your favorite pasta.
Or create the same recipe for the meatballs as described above and make: Stuffed onions & stuffed bellpeppers...just cut off the tops of the onions or peppers remove 3/4 of the insides and stuff with the meat filling. Top w/ a little tomato sauce, bake in a covered baking dish for 1 hr. or so at 350 degrees.

-Sloppy joes

-Tacos

-Green Chile burritos: Brown up the venison w/ chopped onions, garlic salt & add in 1 small can of diced green chile. It won't be hot in flavor. Serve up with hot tortillas.

Make your usual chili recipe, but substitute the ground venision for hamburger. You may have to add more chili powder and spices because the venision is so mild, but I guarantee, deer chili is a lot better than the stuff made with ground beef!

Just chose your favorite ground beef recipe. Ground venision is delicious, and can be used to replace the beef.

Venison Pizza Casserole

½ pkg. extra-wide egg noodles
1 pound ground elk
1 tsp. oregano
½ tsp. salt
1 can tomato soup
½ cup water
1 (2 oz.) can mushrooms
¾ cup grated cheddar cheese

Cook noodles according to package directions. Saute elk and seasonings until elk is brown; add soup, water, cooked noodles and mushrooms. Pour into greased 2½-quart casserole dish, sprinkle cheese over top. Bake (uncovered) in 350-degree oven for 30 minutes.


Sue’s Venison Meatloaf

1 pound ground elk
1 egg
1 cup oatmeal
½ cup chopped onion
½ cup steak sauce
Parsley flakes

Beat egg with fork in separate bowl. Add egg, oatmeal, onion and half of the steak sauce to ground elk meat in a mixing bowl. Mix well by hand. Form into loaf shape and put in glass baking dish. Pour rest of steak sauce over loaf. Bake at 350 degrees for 45 minutes. Garnish with parsley flakes.

Simple Venison Burgers

1 lb. ground venison patties
Aluminium foil
Onion
Salt and pepper
Butter

Wrap each venison burger patty in aluminium foil together with a slice of onion, 1 tbsp. of butter, and salt and pepper. Place patties right in red coals of an outdoor fire.





Let them sizzle for 10 minutes without turning. Toast a hamburger roll while you wait and add ketchup to the results if you like.

Deer Venison Chili

4 lbs. ground meat
5 tbsp. chili powder
1½ tbsp. comino seeds
1 tbsp. white pepper
5 cloves garlic, minced
2½ tbsp. paprika
1 tbsp. salt
2 quarts water

Brown meat in a small amount of grease in a kettle. Add garlic, chili powder, paprika, comino seeds, salt, and pepper. Stir in 2 quarts of water.

Cover and cook slowly, stirring occasionally, about 3 hours. If more water is needed during cooking, add one cup at a time. It may be served as is or with equal parts cooked pink beans or red kidney beans.

Yield 3½ quarts.

Well just brown it just like ground meat, then add eggs, onions cut up small, peppers cut up, and add garlic pepper and ground sage and cook it. WHen done make burritos from it and if you have leftovers you can reheat it for breakfast.

Use it like you would ground beef; chili, burgers, meatloaf, or take it to some place that makes sausage. It's great as summer sausage.

You can use venison for any recipe that calls for beef. It's just leaner! My favorite is venison chili or adding to my spag. sauce!!

Try it in chili and add stewed tomatoes or diced canned tomatoes with green chilis if you like it spicy.
