but i disagree to that, he says at the bottom of the pickle bottle the liquid is vegetable oil to which i strongly disagree and told him its sumting else used to preserve pickle. i believe what i said is right.

Pickles are "pickled" in a mix of vinegar (sometimes wine too), salt and alum. Flavorings are often dill.
There is no oil in pickled anything
Marinated things are in oil.

The preservative used in pickles is vinegar as the acidity of acetic acid prevents micro organisms to grow. Oil is lighter and would float on the vinegar unless an emulsifier was used. Oil can also be used as a preservative depending how much oxygen is present. Oxygen would make the oil eventually rancid.

If you were to pickle gherkins in vinegar they would keep for years. in oil they would keep only a few months.

Pickles have no oil in them. Your friend is very wrong. I am a home canner and believe me, no oil. It does however have various spices such as dill, alum.mustard seeds, sugar any number of things depending on the pickle. But your main ingredient besides your cucumbers or what ever veggie, fruit or meat that you are pickling is vinegar.

you're both right. i looked on wikipedia and it said that pickling is the process of preserving food by soaking and storing it in brine. however, it also says that some indian 'pickles' are stored in oil. there was no mention of vinegar, which i had thought to be the answer, or of sugar, which i thought might be one of the preservatives in some types of 'branston' type pickles

Pickle contains vinegar and salt , the chemical sometimes used is sulphur dioxide.Some brands contain rapeseed oil but it is not a preserative more a thickener.

Pickled Cucumbers are made with Brine. This is a mix of vineger, salt and a small amount of sugar. Other spices such as garlic are sometimes added to the brine to give the pickle a unique taste.

it depends on the pickle.

Onions are pickled in vinegar but the Indian style pickles such as mango and chilli are made with oil.
