Preheat your oven to 250 degrees. Heat olive oil in a frying pan over medium high heat. Season the pork chops (salt and pepper is fine; use other seasonings if you prefer) and place them in the frying pan. Cook for 2 - 3 minutes on each side, just long enough to form a nice brown crust. Put the pan (if it's oven safe, or transfer to another dish) in the oven and bake until the internal temperature of the chops reaches 145 degrees, about 30 minutes for a 1" thick chop. They'll be nice and juicy.

Cut a pocket in the center, and stuff w/ a stuffing of bread crumbs or croutons, thyme, EVOO/butter, and blue cheese. Brown in a skillet, then bake off. Degalze pan w/ white wine, reduce, add a splash of whipping cream and salt, and serve over chops.

Fry them up in a skillet on the stove top over medium heat, before placing them in the frying pan, sprinkle some seasoning on them, even something as simple as salt & pepper. Pork chops taste much better fried on the stove, than cooked in the over.
