potatoes come in three basic types;
Waxy ; Creamers , Red Bliss- good for things like potato salad or any use where you need the potato to stay in one piece
Starchy or Baking: Russets- aka Idaho's - are great for baking or mashed potatoes because the the flesh falls apart when cooked. Their dry texture also allows moisture- sour cream milk/butter to be readily absorbed
Then there are the potatoes like the Purple Peruvians and the Yukon Golds that are sort of kind of in between . They are not great at anything But they are not bad either. Their unique color[s] however makes them useful if presentation is a primary consideration.

Idaho potatoes are grown in Idaho. Other kinds are grown in other states. The different varieties of potatoes probably have different nutritional values, but not the state it was grown in.

"Idaho" potatoes are grown in that state. Period. No different than the ones grown in Oregon (ever heard of Ore-Ida???), Washington, or Montana. Buy according to price.

The only differnece is where it was grown because all potatoes are the same but diffent shapes.

well my son, one is from idaho.... and the other is from the grocery store!!!! D-U-AND UH!!!!!

ooooh oooooh i know!!!!!............. everyone answered before me. dang!!! duh ding dong, they are from idaho. as to the real question, i have no idea the difference, maybe the size?
