My mother in law said she saw something on tv about that and wanted to find a recipe. I tried a search online, but couldn't come up with anything...

Please don't give me thumbs down because I'm taking up a lot of space, but 2 recipes require space :-)
Here's just what you're asking for, eggless muffin recipes that use applesauce:
Banana Oatmeal Muffins
30 minutes (10 min prep, 20 min cooking)
6 muffins

3/4 cup all-purpose flour
1/2 cup rolled oats
1/4 cup brown sugar, unpacked
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/8 cup skim milk or soy milk
1/8 cup applesauce
1/4 teaspoon vanilla extract
1/2 cup mashed bananas

1 Preheat oven to 400 degrees F (205 degrees C).
2 In a bowl, combine flour, oats, sugar, baking powder, soda, and salt.
3 In another large bowl, mix together milk, applesauce, and vanilla.
4 Add the mashed bananas, and combine thoroughly.
5 Stir the flour mixture into the banana mixture until just combined.
6 Lightly grease and dust 6 muffin cups (or line with paper bake cups), and divide the batter among them.
7 Bake at 400 degrees F (205 degrees C) for 20 minutes.

Eggless Apple Muffins

2 cups flour
1/2 cup sugar
2 1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
2 medium apples
1/2 cup vegetable oil
1/2 cup sour cream
1/2 cup apple sauce
1 tablespoon sugar

Preheat oven to 400 degrees F. Combine flour, 1/2 cup sugar, baking powder, cinnamon and salt together and set aside. Peel, core and dice apples. Try not to cut them too big or they will not have time to cook completely. In medium bowl combine oil, sour cream and apple sauce. Add dry ingredients and apples and stir to combine. Batter will be stiff.

Divide batter between 12 greased muffin tins. Sprinkle remaining 1 tablespoon sugar over muffins. Bake at 400 degrees F. for 18-20 minutes or until done. Let sit in pans for 2 minutes before removing to a cooling rack.

Is there a reason she doesn't want the egg in the recipe? I have 2 recipes that only use egg whites (so lower cholesterol). One is a Bran Muffin, the other Oatmeal Muffin. Email me if you want me to send or post either of these recipes :-) Don't want to take up even more space!

Try what I do: Take a spice cake mix and add one of the smaller-sized cans of packed pumpkin. Stir this up with a big spoon, and add a little water until it's easy to stir. It'll have the consistency of a brownie mix. Pour it into a 13x9 greased pan and bake for the amount of time that it says to on the cake mix box. It's very moist, and very low fat, and delicious with white or cream cheese icing! I've never made it in muffin tins, but I don't see why you couldn't. Good luck! We make this every time my little nephew comes over -- he's allergic to eggs. He could eat 4 pieces at a time.

APPLESAUCE MUFFINS

1/2 c. oil
1 c. sugar
1/2 c. applesauce
1 1/2 c. flour
1 tsp. allspice
3/4 tsp. salt
1/2 tsp. soda
1/2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg

Mix all ingredients together and bake in muffin cups (lined with papers) at 400 degrees for 15 to 20 minutes.

no just use sugar substitute add low fat flour you will ruin taste if you cut back too much yummy

I've heard of substituting apple sauce for the fat (oil, butter, shortening) but not for the eggs.
