I make pretty easy dinners with the crock pot that cook all day while I'm working -

put beef spare ribs in the crock and add a bottle of bbq sauce.

I also put pork chops in the crock and a family size can of cream of chicken soup - excellent.

Cube steaks with a large can of diced tomatoes and add italian seasonings. You can thicken the broth with cornstarch and water mixture when you get home.

Make a pot roast - add cut up potatoes, carrots, onions & celery on the bottom of the crock & your roast on top. Add a cup and a half of water. Brown the roast before putting in the crock pot though.

I love my crock pot too!! Try making stuffed peppers. They are fantastic in the crock pot.

I don't measure, but I'll try my best to give directions....

4 med-large green, yellow or red bell peppers
1 lb ground beef or steak
1 large onion diced
2 eggs
rice or crushed crackers - about 2 cups
garlic powder - to taste
black pepper - to taste

mix everything in a large mixing bowl (if it feels sloppy, add more rice or crackers) Fill bell peppers and place in crock pot. Add a large jar of spag. sauce. Hint: make sure sauce DOES NOT come to the rim, leave at least 2 inches. If you fill it too full, you'll come home to a mess on the counter! Trust me...lol Cook on low. I serve over pasta with a salad. If you have your own recipe for the peppers, use that, just cook like I mentioned. Good luck!!

I like to make what I call Ham chowder. It's nice and filling on a cold night. Here is the recipe. I came up with it myself so bear with me.
8 cups thinly sliced potatoes
2 cups diced ham
1 sm onion chopped
1 lb. Velveeta chopped
1-15 oz. can whole kernel corn undrained
1 can cream of mushroom soup
salt and pepper to taste

Layer all ingredients in your crock pot except the soup. Be sure to salt and pepper layers. Spread soup over the top to seal. If you need to: use another can of soup. Set crock pot on low and cook covered for 6 to 8 hours.

Slow Cooker Enchiladas

* 1 pound lean ground beef or turkey
* 10 (6 inch) corn tortillas, quartered
* 1 (1 ounce) package taco seasoning mix
* 1 ¼ cups water
* 1 (12 ounce) jar chunky salsa
* 1 (10.75 ounce) can condensed cream of mushroom soup
* 1 (10.75 ounce) can condensed cream of chicken soup
* 4 cups shredded Mexican cheese blend

Crumble the ground beef into a skillet over medium-high heat. Cook and stir until evenly browned. Add taco seasoning and water; simmer for 15 minutes over low heat.

In a medium bowl, stir together the salsa, cream of mushroom soup and cream of chicken soup. Mix in most of the cheese, reserving 3/4 cup for later.

Place a layer of tortillas covering the bottom of a slow cooker. Scoop a layer of the ground beef over that, and then spoon a layer of the cheese mixture. Repeat the layers until you run out of stuff, ending with a layer of tortillas on the top. Top with remaining cheese.

Cover, and cook on High for 45 minutes to 1 hour.
