I've butchered all kinds of animals from deer to squirrels, but never butchered a hog for bacon before.
I'm learning how to smoke foods and will eventually butcher a hog for food, but was curious as to what cut is the bacon cut.

I wish I could draw for you. I have the perfect butchering diagram in front of me. It shows all of the cuts of meat from a hog. The bacon is cut from the belly., just below the spareribs, back to the hind-quarter, where the ham starts.

Bacon comes from the side of the belly, salt pork comes from the less meaty, underbelly and has more fat. before you smoke your meat you must cure it, and there are several options depending on the cut and the desired taste. i have raised and butchered my own hogs for years, but you must know it is hard and very time to consuming. all in all it can be very rewarding when you get it right the taste is pure heaven.

The cut used to make bacon comes from the side - or belly - of the pig. When it is cured and smoked, it becomes bacon.
