Not too sure about doing chops in a casserole, but it dosen`t mean that it cant be done. Try this:: Place your pork chops in your casserole dish. Cut your peppers into thin strips. Cut an onion the same way. Mix your onion and pepper strips, (you might want to add some sliced mushrooms too if you like!) and put on top of your chops. In a bowl, add a small can of diced pineapple, juice and all, and a jar of oriental duck sauce. Add a splash of soy sauce and 1 Tbl. of ketchup. Stir together and pour over chops and veggies. Cover and put into the oven until the pork is done and tender. Serve over white or wild rice.

I would cook them up and serve as a side. Slice them into thin long strips, and cook in a shallow fry pan with butter, garlic if you have it, and slice up some onions, and toss them in if you have any, just cook until semi-soft, and serve on the side with your pork chops.
I don't know about you but I feel that pork chops taste better fried in a pan on the stove than cooked in the oven. I have tried the rice and cream of mushroom with the pork chops before and just did not like it myself.

Actually, I'd marinate them in a vinaigrette, and either grill or broil them. Serve over the chops or on the side. It's fantastic that way. ( cut into fat slices)

I can't help with any casseroles, I never make them.
