Wheat, whether in Saskatchewan or Manitoba, will turn to gold (meaning ripe for harvesting) in late summer (depending on the year) Wheat is usually harvested in Late August, or early September.

That would be in the summer -- usually around the end of July. The annual harvest starts in early August.

But if you want to see Saskatchewan at its very best -- and it can be amazingly lovely -- I would come here in the second half of June.
