I'm not sure what a people to people trip is. Is it some sort of charitable organization? Or something for you yourself? It makes a difference for type of fund raisers so please add info.
I noticed you said it wasn't a charity so you will have to make sure you don't present it as on.
you could do the old stand bys car wash,collect bottles,make valentines and sell them.
