We bought one that was way too big for our family. So since the original ham dinner, I've used it in a pasta sauce and in a lentil soup. And we STILL have leftovers! Please help me out with something creative and tasty. Thanks!

Here in the south, pinto beans seasoned with ham and cornbread is a tasty favorite! You can also substitute navy beans. Sort, wash and soak a pound of beans over night. Put in slow cooker with good sized handful of chopped ham and cover with about two inches of water. Cook on low for about eight hours - salt before serving if needed. On the side of the Clabber Girl Baking Powder can is usually a recipe for cornbread. I leave out the sugar because we don't like it sweet. It's easy and will take about 20 minutes to cook. If you can't find it, look on the Clabber Girl Baking Powder website - I have retrieved it from there before I taped it to the inside of my cabinet.

My husband and little ones love Ham and Bean soup after the holiday. Boil some Spagetti al denti -drain-put back into saucepan keep hot.
Add a bottle of full cream grated cheese diced ham you can use a fair bit add diced garlic.
mix together delicious.
also 2 cups sr flour 2 eggs milk to blend to a paste add onion cheese and ham make hash browns.

Mac and Cheese with Ham and Broccoli.

make homemade Mac and cheese to bake - omit any salt. (Don't use the boxed stuff - it's way too salty with the Ham). Dice the ham, add it to the mac and cheese. Just add broccoli (I use blanched fresh, but frozen, thawed and well drained works too)

Top casserole like you would Tuna Noodle, and bake till bubbly and hot. (no exact time, because everything is cooked already, just need to heat it up)

ham and cheese and potato casserole

cube potatoes (peeled if you like them peeled) and boil intil mostly done. drain and put into buttered casserole dish. add cream of mushroom (or any cream based soup) soup and milk, shredded cheese (or velveeta) and seasonings to taste. add ham and top with buttered bread crumbs- bake at 400 F until hot and bubbly

serve with a salad or veggie of choice

you can make ham & cheese sandwiches, ham salad, or shred the ham to put in a pot of beans & serve it on top of rice. you can even make a soup with vegetables.

Use it in Fried Rice. Just add diced ham,shrimps,peas and eggs to cooked rice and fry. Season with salt and pepper. You may also add spring onions if you like.

Hearty Ham Casserole
"A great way to use leftover ham. Baked cheesy potatoes with ham and corn."
5 servings
INGREDIENTS
2 cups potatoes, cubed
2 cups cooked ham, cubed
1 (15.25 ounce) can whole kernel corn, drained
1/4 cup finely minced fresh parsley
1/4 cup butter
1 tablespoon chopped onions
1/3 cup all-purpose flour
1 3/4 cups milk
1/8 teaspoon ground black pepper
4 ounces processed cheese food, shredded
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and cool.
Combine potatoes, ham, corn and parsley; set aside. In a saucepan saute onion in butter for 2 minutes, stir in flour until blended well. Gradually add milk and pepper. Bring to a boil. Cook and stir for 2 minutes. Remove from heat and pour over the ham mixture. Stir to mix well.
Pour into greased 11x7 baking dish. Cover and bake for 25 minutes. Uncover, sprinkle with cheese and bake 5 to 10 minutes longer until cheese melts.


Black Bean Soup
Serve with corn muffins. This recipe freezes well. Enjoy."

2 cups dry black beans
1 ham bone
6 cups water
4 cups chicken broth
1 tablespoon salt
2 tablespoons vegetable oil
1/2 onion, chopped
1 tomato, diced
1/2 cup chopped ham
1 tablespoon distilled white vinegar
DIRECTIONS
Simmer beans, water, ham bone, broth, and salt for 1 1/2 hours.
Discard ham bone. Puree about 1/2 of soup; pour back into pot.
Saute onion, tomato, and meat in oil until onion is soft. Stir in vinegar, and then add mixture to beans. Simmer for 20 minutes. Serve hot.

Ham Croquettes

1 tablespoon butter
1/2 cup onion, chopped
3 medium green onions, chopped
1/2 teaspoon garlic powder
1 pound ham, finely chopped
1 1/2 cups shredded Cheddar cheese
3 cups dried breadcrumbs, divided
salt and pepper to taste
4 eggs
2 cups oil for frying
1/8 cup water
DIRECTIONS
Melt butter in a large skillet over medium heat. Stir in onion, green onions, and garlic; cook until tender, about 10 minutes.
Transfer contents of skillet to a large bowl. Stir in ham, Cheddar cheese, and 1 1/2 cups of bread crumbs. Beat 3 eggs; stir into ham mixture. Sprinkle with salt and pepper. Using your hands, make golf ball-size balls out of the ham mixture.
Heat vegetable oil in a large skillet over medium heat. Spread remaining bread crumbs onto a plate. In a large bowl, beat 1 egg; stir in water. Dip balls into egg mixture, and roll in bread crumbs. Place balls in hot oil being careful not to crowd. Fry until golden brown. Remove to paper towels to soak up grease.
