6 oz plain flour, 2 eggs, 6 oz semi skim milk and 4 fl oz water. 220 c for 10 mins then 200 for 20 mins, stodgy in the middle. didnt rise very well but crispy on the out side.

Yep too much milk

If you use the same size cup each ingredient should be the same amount you need a bit of hot oil in the bottom of your tray and keep the heat right up for about 10-15 mins

I use less milk and more water and make sure that the mixture is well beaten. I then put in the fridge to cool while the oven and fat gets up to the right temperature. I would say 200 the whole time is sufficient. Leave oven closed until it is nearly cooked and opening the door too soon will make the batter sink in the middle. Be sure to make certain that the fat you are pouring the mixture into is sizzling when you put it in. Better luck this time. It is really easy!

Add a little suet. They come up really crispy and fluffy.
Put the batter mix in the fridge for about half an hour that might work too.



I make my batters like this and have had no complaints .....so far

4 oz of Self Rising flour - 8 oz of milk - no water.......

Sounds like you have use too much liquid in your mixture and that your oil wasn't hot enough when you poured in the batter mix

either not enuff flour to too much milk, and after reading your receipe I really think it's too much milk!
