there is this guy that likes me but today he came up to me and my mom and he was acting like he was fixing the fruit arrangment he is the manager of a grocery store . but he said hi and me and my mom said hi and i smiled at him and my mom told him that he looked great in pink. and my mom said he steped back and his head was rolling like he got punched kinda. what does this mean?

It probably means your mom embarrassed him in front of you. He obviously likes you otherwise he wouldn't have reacted the way he did. He was put on the spot in a not so flattering color and he was called on it. Though I'm sure he looked nice in his pink shirt, he probably think you would think less of him for wearing such a color, as if you didn't notice it yourself. anyway, who cares about his reaction, next time you see him, strike up a conversation and see if you like him back.
