Lentil curry is one of my favourites. Cant give you any exact measurements but try this - its lovely.
dry fry the spices - either use a good curry powder or use mustard seeds, cumin, turmeric, crushed coriander seed, cardamon pod (crush) and a couple of bay leaves. When fragrant and the seeds are popping, add a good glug of oil and a knob of butter. Now sweat some finely chopped onion in the oil.
Add some crushed garlic and ginger.
Now add the lentils. Stir and let them get shiny from the oil. Let them cook on a very low heat for a few minutes. now add a tin of chopped tomatoes. and let it bubble away for a while. Add a squeeze of tomato puree. Now add water (or veggie stock) to cover the lentils. Add some salt and black pepper and if you want some heat now is the time to add some dried chillis.
Cook for about 20 mins very slowly - adding extra water if it looks like its drying up.
After 20 mins the lentils will be soft and starting to get mushy. Get the bay leaves out. You can eat it now. I like to add a knob of butter at the end of cooking - it really makes a difference.
I would also add a big handful of chopped coriander. This works best with red split lentils. Green ones take a little longer, but work well, as does split peas or mung beans

Do you mean dhal? Dry pan on medium heat, teaspoon of mustard seed, cummin (jeera), fenugreek, black pepper corns. Cover pan, when seeds start to pop, take pan from heat, add a little oil, finely chopped onions, ginger, a couple of chilis and garlic. On gentle heat stir until onions becomes transparent. Now add the lentils. Dried lentils may have to be soaked over night (see Packet) drain lentils and add to pan. Turn up the heat a little, add a teaspoon of turmeric. Stir and leave to simmer. Cooking time depends on type of lentils, about 15 minutes before cooking time is complete, add salt to taste. About 5 minutes before serving add a teaspoon of Garam Masala. Serve with a raita and Nan, chapattis or rice.

Here is one of the verities of Lentil curry you can easily prepare:
Red Lentil Curry:
2 cups red lentils
1 large onion, diced
1 tablespoon vegetable oil
2 tablespoons curry paste
1 tablespoon curry powder
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon salt
1 teaspoon white sugar
1 teaspoon minced garlic
1 teaspoon ginger root, minced
1 (14.25 ounce) can tomato puree.
Directions
1. Wash the lentils in cold water until the water runs clear (this is very important or the lentils will get "scummy"), put the lentils in a pot with water to cover and simmer covered until lentils tender (add more water if necessary).
2. While the lentils are cooking: In a large skillet or saucepan, caramelize the onions in vegetable oil.
3. While the onions are cooking, combine the curry paste, curry powder, turmeric, cumin, chili powder, salt, sugar, garlic, and ginger in a mixing bowl. Mix well. When the onions are cooked, add the curry mixture to the onions and cook over a high heat stirring constantly for 1 to 2 minutes.
4. Stir in the tomato puree and reduce heat, allow the curry base to simmer until the lentils are ready.
5. When the lentils are tender drain them briefly (they should have absorbed most of the water but you don't want the curry to be too sloppy). Mix the curry base into the lentils and serve immediately.
Try to prepare it with Pure clay cooking pot you will love it and all the nutrients will stay in the food. I got mine from mecware.us
