We can buy them from the local 7-Eleven. There version is deep fried. I don't want to deep fry them. I would love a good recipe with chicken that is not fried.

I usually cook a beef roast in the crock pot until it falls apart. Season with salt, pepper, etc. Shred the beef and set aside.
Heat vegetable oil in the bottom of a frying pan and place corn tortilla in hot oil for about 20 seconds. Drain on paper towels, continue until all are done.
Place small amount of beef on tortilla and roll tightly. Set aside until all are rolled.
Fry in hot vegetable oil until crisp. I usually serve with salsa or guacamole.

take some pulled/shredded chicken, seasoning of your choise, wrap it in a tortilla & stick it in the oven for a while on a pizza pan or cookie sheet....should come out nice & crispy without frying it.
