Silly question really. It would depend on the guy and the girl. I talk during dates trying to find out everything I can. I try and make the first couple dates a relaxed conversational outing. If we make it past three dates of talking and are still interested then we can start relaxing and have a great time. If not well we can still see movies and go to dinner but I will have already taken her off the maybe list.

Well for me it would be a woman...and I'm assuming this is a first date.
I normally pick her up or if she chooses, we will meet at a specific restaurant. Then I would let her talk about her day and anything else that is on her mind and see what frame of mind she is in. If she's relaxed, then I'll proceed to order drinks and we'll make small talk about ourselves and possibly about family. What does she like to do, where would she like to visit in the near future for a vacation...etc.
Then it depends again on her mood and how were either hitting it off or not. There are so many variables, we could write a book on the next couple of steps. They are best to be lived by you.
