Eat bread or crackers. You need something to absorb the oils in the spices.

Water doesn't make the "burn" of a spicy food dissipate. Sugar or milk both work fairly well. For Chili, I add brown sugar while I am letting it simmer. That way it is still spicy but the taste is complimented by a sweet taste that keeps your mouth from catching fire.

Water won't help - it doesn't break the bond the capsicum forms with your taste buds. Dairy products are effective as the proteins can neutralize the bond. Chocolate is reported to help as well, but it has never been effective with me. Beer is also a classic. If you simply must kill the heat I would go with sour cream or yogurt. BUT - it is MUCH more fun to simply hang on and enjoy the ride. You'll get a natural endorphin rush and be feeling real good when the heat wave subsides.

Milk, Bread, Yougurt, Ice Cream or Crackers work. Don't drink water to get rid of it though! It only spreads it and makes it last longer.

Try plain white rice, or bread (like rolls and such). the starch and blandness of these items is supposed to help reduce the effects of chili and other spicy foods, and helps to cleanse the pallete for the next course.

Need to cooling off? if the chili's too hot for you,
or you just need a little break from the heat, you
can use ice cream, sherbet, or ice cold milk for
immediate relief. Keep some frosted mugs of milk nearby.

Milk

Milk, or any milk based product, like Ice Cream. Water doesn't take it away but just move it around. Milk will diffuse the heat.
