I don't know much about food, but I'd go with some plain white rice that you can pour the chicken and dumplings over.. Sounds awesome!!

A small salad & any type of bread. Other than that you don't want a big side with it. Crockpot type dinners are more of a by-itself dish. You've actually got a good thing for you there cause it's already got chicken & veggies in it. Don't use any type of pasta or rice as a side. You already have the dumplings & if you have bread, anything else will be waaaaay too many carbs there.

If you're looking for a balanced meal, the dumplings are carbs/starch (bread), the chicken is your protein, and the veggies are a small portion of your veggie category. I would add a nice green salad to get a few more veggies in- some Romain lettuce, purple onion slices, cherry tomatoes, and feta cheese and salad dressing. You will not get a full serving of dairy with a little feta so you would need to add to the dairy category- if you have kids or eat like a kid (like me) a homemade milkshake would be a great addition. 1-2 scoops of ice cream in each glass, a drop of vanilla, and fill the glass with milk and stir to combine (unless you have a blender) Or if you are looking for something to beat the cold with try a mug of hot vanilla! For each serving you need a cup of milk, a teaspoon of honey, a drop of vanilla, and a dash of cinnamon. Warm on the stove or in the microwave! A great way to warm up in the midwest winter if you want a change from hot cocoa! Enjoy!

I make a plain rice, with salt, pepper, 1 tsp lemon juice, 1/2 tsp of the lemon zest. When rice is tender I add chopped fresh parsley and a tablespoon of butter (or a drizzle of olive oil). I usually serve with fish because I get stuck on sides for fish, too. I usually just use veggies like sauteed sliced zuchini and summer squash and slivered carrots, they go really good with the lemon flavor of the rice, and look good beside it. I also sprinkle the veg with chopped parsley, too. I love mahi mahi, it's mild and picks up whatever flavoring you use very nicely.

Check the frozen food section they have the most awesome mixed vegetable combos and you just put the whole bag in the microwave and they cook in about 4-1/2 minutes, Birdseye Brand is called SteamFresh

do u have side kicks... they are good.. and good..
potatoes mashed...
if u make macronni and then boil a few eggs.. then mash the boil eggs and mix it into the cooked macorri then add a bit of mayo and mustard and u got an egg salad
