Always unsalted so that you can later on add the right amount of salt to the shortbread. With salted butter, different brands come in with different amount of salt, and it's hard for you to know exactly how salty your shortbread is gonna turn out.

Unsalted! Use a tiny pinch of salt in your flour. You probably have a cookie recipe- some people do get them confused when writing recipes down. A shortbread recipe should use only butter, sugar, flour and a pinch of salt, maybe a splash of milk or juice (Scottish Shortbread will usually include semolina or similar). You also need to wait until they are completely cool before eating so they're crunchy. You can add chocolate chips or raisins if you want, you shouldn't need to adjust your recipe much.

Interesting question I don't think my recipe states salted or unsalted. My first guess would be unsalted, but then I never put salt in any cookie recipe that calls for it.

I usually use unsalted but then depends on yr preference. mine is as simple as this recipe that will follow:

SHORT BREAD

2 c. flour
2 tbsp. cornstarch
1/2 lb. (2 sticks) butter
1/2 c. sugar

Sift flour with cornstarch. Allow butter to get soft (short bread must be made with butter) then using only your hands, cream sugar with butter. Next add the sifted flour handful by handful and knead it on a slightly floured board. Work into 1 large or 2 small rounds, flute edges with your fingers and prick with a fork. Bake at 375 degrees for about 25 minutes in a greased and lined springform pan.

I always use unsalted butter for everything I bake. It's healthier. I never use margarine. It's one molecule away from plastic. We certainly don't need that!!

personal preference, I think, but I always use unsalted, because I wasn't raised with much salt in my diet, so I don't expect that taste.
