My first time grilling tuna & salmon. Do ya have to flip the fish? How long to cook? And also, I like the lemon-pepper & mesquite sauce flavors, know any recipes of that?

Yellowfin is hard to screw up...it's delicious no matter how you prepare it.

Most Important Thing: make sure your grill surface is clean, and make sure it's hot. Let the grill get good and hot for at least 15 minutes, then use your wire brush to scrape the grates. You want any little particles to be burned away.

Whether or not you've marinated the tuna, brush one side of it with vegetable oil just before throwing it on the grill. Put the oil-side down on the grill first, and while that's cooking, brush the other side.

Grill the tuna (like I said, High Heat) for 4 minutes per side. Flip it exactly ONCE. This is assuming steaks that are about 1 inch thick. Add 30 seconds (per side) for each additional half-inch of thickness.

If you have a REALLY thick steak, like 3 inches, give it 5 minutes per side (any longer, and the outside will be burnt). The center of the steak will still be pinkish-red (medium rare), which is the best way to eat it.

Okay, what I always do is marinate the fish beforehand. The flavor really sinks well into the fish.

INGREDIENTS:

* 1/2 to 1 inch Tuna Steaks
* marinate in:
* 1/3 - 1/2 cup each Teriyaki and Soy Sauces
* 1-3 cloves fresh minced garlic
* the juice of 1/3 - 1/2 fresh lemon
* 1 tablespoon whiskey or sake (optional)

PREPARATION:
Grill over white charcoals using mesquite wood chips for smoke. Do not overcook. Tuna should be pink in the center.


What I always do is to place the fish in a cling foil. It keeps the flavor in very well and it doesn't mess up your grill.

You will grill them about like a beef steak... they are pretty firm fish, and shouldn't fall apart on you. Try to just flip once, though, dont' flip-flop them back and forth.

I'd marinate 20 min or so in a little lemon or lime juice, garlic, kosher salt, and a little of your lemon pepper. Skip the mesquit, IMO. Oil the grill, then grill on high, 4-5 min on each side, maybe mroe, maybe less, depending upon how thick the filet is and how well done you want it.

For tuna steaks grill about 5 min on each side the tuna should be rare on the inside..You can use the lemon pepper on the tuna befor and after cooking..dont forget to brush you tuna with olive oil befor cooking
