Ingredients
- 1 HORMEL® Corned Beef Hash (15-ounce) can
- 2 cups frozen mixed vegetables
- 1 (10 3/4-ounce) can cream of celery soup
- 1 teaspoon dill weed
- 2 tablespoons grated parmesan cheese
- 1/4 teaspoon coarsely ground black pepper
- 1 (4.5-ounce) package refrigerated biscuit dough








Country Corned Beef Pie

Servings: 4
Prep Time: 15 minutes
Cook Time: 1 hour

Directions
Heat oven to 425°F. Spread hash evenly in 9-inch pie plate. In bowl, combine vegetables, soup, and dill weed. Spoon over hash. Cover. Bake 35 to 45 minutes or until thoroughly heated. Meanwhile, in small bowl, combine cheese and pepper. Cut each biscuit in half to make 2 half circles. Coat dough with cheese mixture. Arrange in circle on outside edge of hot pie filling. Sprinkle any remaining cheese mixture over pie. Bake 7 to 10 minutes longer or until biscuits are deep golden brown.

Make a rich shortcrust pastry,
100g of Plain Flour
50g of butter
25g of lard (shortening)
a sprinkle of ice cold water

rub the fat into the flour until it is like breadcrumbs, add the water a tablespoon at a time until you have made a dough. leave in fridge to chill.

make the filling for the pie.
Cube a tin of corned beef and place it on the bottom of the pie dish.
Make a basic white sauce and add to it 2 beef stock cubes mixed with boiling water, add some gravy browning and black pepper.
The consistancy should be runny but not watery.

Add boiled potatoes, tomatoes, mushrooms, sweet corn or any other vegetables you like to the corned beef and cover with the sauce.

Roll out your pastry cover the pie dish and bake in a hot oven (190) for 35 mins.

Key is making sure your pastry is not over worked!

Line a traybake tin or round enamel plate with shortcrust pastry. When I make it, I always make BIG- as it freezes well. Also, don't be mean with the meat, CB is very cheap so put plenty in. Don't be tempted to add Worcs sauce as it makes the mix too wet. Metal tins are better for this rather than glass or ceramic.

Boiled potatoes [waxy type are best as they keep their shape & won't turn to mush] With a table knife chop roughly in the pan approx 1/2inch dice. [can use leftovers]

Fry plenty of chopped onions in a little oil til soft & toasted golden brown. Drain on kitchen paper & add to the pan.

Cut all the fat from chilled cans of corned beef & crumble/chop into dice the same as the potatoes, add to the pan.

Sprinkle over salt & pepper and a finely powdered beef Oxo cube[s] & stir the mix thoroughly but gently with a fork [have a taste to check the flavour] don't mash- you need to be able to see the individual pieces of meat & potato.

Pile the mix onto the pastry, cover with more pastry & seal the edges with egg or milk. Make a few slits in the top to let the steam escape, glaze with beaten egg. Bake as normal & when golden brown lay a piece of foil over the top- turn down the heat a bit & cook for approx 10mins more. Try not to slice it straight from the oven as the filling can ooze out a bit, best to leave it for about 15 mins.

1 large onion
Bag of potatoes
Cheese.
Layer a dish with beans in the bottom,then a layer of chopped onion on top,then sliced corned beef on top of that,boil & mash the potatoes fill the rest of the dish with that.Grate cheese on top,put in oven gas mark 5 for 45-55 mins.Delicious.

The most important way is to not use beef. Use otter meat instead.
